Gluten Free Blender Batter Pancakes


  • 1 cup plain yogurt
  • 2 cups water
  • 1.5 cups gluten-free rolled oats
  • 1.5 cups brown rice
  • 3 T coconut oil
  • 3 eggs
  • 3 T ground flaxseed
  • 1 T baking powder
  • 1 tsp baking soda
  • 1 tsp salt


  1. The night before you want to make your pancakes, put the yogurt, water, oats, and rice in the blender. Blend for 1-2 minutes until well combined.

  2. Let the mixture soak overnight (or 8+ hours).

  3. In the morning, add the coconut oil, eggs, and flax seed to the mixture. Blend for 2 minutes until well combined

  4. In a small bowl, combine the baking powder, baking soda, and salt.

  5. With the blender still running and a vortex in the center, pour in the baking powder mixture and allow the blender to run for about 10-20 seconds. 

  6. On a hot oiled griddle, pour about 1/4 cup portions and cook pancakes until bubbles start to pop on top & then flip and cook on the other side until golden brown.
