The night before you want to make your pancakes, put the yogurt, water, oats, and rice in the blender. Blend for 1-2 minutes until well combined.
Let the mixture soak overnight (or 8+ hours).
In the morning, add the coconut oil, eggs, and flax seed to the mixture. Blend for 2 minutes until well combined
In a small bowl, combine the baking powder, baking soda, and salt.
With the blender still running and a vortex in the center, pour in the baking powder mixture and allow the blender to run for about 10-20 seconds.
On a hot oiled griddle, pour about 1/4 cup portions and cook pancakes until bubbles start to pop on top & then flip and cook on the other side until golden brown.
