This pancake recipe is one we make over and over again in our family. It is very forgiving and makes some of the yummiest gluten-free pancakes around. The recipe below is a triple sized batch because I often make them on the weekend and freeze them for the upcoming week. We just heat them up in the toaster oven for a delicious, filling, and inexpensive breakfast. The grains soak overnight with the yogurt which helps with their digestibility. I, personally, am sensitive to even gluten-free oats, but when they are soaked in an acidic medium (such as yogurt), they are much easier to digest. You can use whey strained off from yogurt to soak these too! Just replace the yogurt & water with whey. You can also make this with my homemade yogurt!

For best results, you want to use a high power blender to get the batter super smooth. I love my Vitamix more than someone probably should love a blender. It is a spendy purchase, but something I use multiple times per day. This batch is also rather large and will fill up the entire Vitamix container.

NOTE: For a regular sized blender, I’d cut this recipe down to a third ( i.e. – 1/2 cup oats instead of 1.5 cups).

So, here’s the process of how to make this recipe – all the amounts are listed down below!

The night before you want to make your pancakes, put the yogurt, water, oats, and rice in the blender. Blend for 1-2 minutes until well combined.

Let the mixture soak overnight (or 8+ hours).

In the morning, add the coconut oil, eggs, and flax seed to the mixture. Blend for 2 minutes until well combined.

In a small bowl, combine the baking powder, baking soda, and salt.

With the blender still running and a vortex in the center, pour in the baking powder mixture and allow the blender to run for about 10-20 seconds.

On a hot oiled griddle, pour about 1/4 cup portions and cook pancakes until bubbles start to pop on top & then flip and cook on the other side until golden brown.
